My favourite pancake recipe.


Pancake Recipe - Serves 4

2 cups of all purpose flour - sifted
2 1/2 teaspoons baking powder
3 Tablespoons of granulated sugar
1/2 teaspoon salt
2 large eggs
1 1/2 to 1 3/4 cups milk
2 tablespoons melted butter

1. Sift flour, baking powder, sugar and salt
2. In seperate bowl, whisk eggs together with 1 1/2 cups of milk
3. Add flour to mixture , stirring til smooth.
4. Blend in melted butter.
5. If batter seems too thick, add milk.
6. Cook on hot greased pan, using about 1/4 cup of batter for each pancake.
7. Cook until bubbly, a little dry around the edges and lightly browned on both sides.

(I add a lid of vanilla essence to my mix, but it's all about preference)

Can serve with butter, lemon juice, cinnamon, sugar, maple syrup, ice cream, fresh berries on top, the options are endless!! :)
